Grilled Peaches With Mascarpone Ice Cream

These grilled peaches with mascarpone ice cream are the holy grail of grilled summer desserts. It’s sweet, it’s visually beautiful, kids love it, and it’s healthy-ish. The juicy peaches pair perfectly with the subtle sweetness of the mascarpone ice cream, perfect for a summer day.

Grilling a fresh peach brings out a deeper flavor in the sweet summer fruit, so I love putting them on the grill. There really isn’t much better than a perfect grilled peach.

If you’re in a rush, this recipe works just fine with store bought vanilla ice cream. My favorite is vanilla bean.

Why Do You Grill A Peach?

Peaches are naturally sweet, and when introduced to the heat of a grill that sweetness is greatly intensified, as the peach itself softens. The caramelization of the sugars from the Maillard reaction makes this possible.

Aside from the increased sweetness, the peaches will also take on a subtle smokiness from the grill. This brings depth of flavor that can only be induced by grilling.

Having said that, if you don’t have a grill these can be done on a grill pan and stove top. In that case I would recommend adding just a pinch of smoked salt to each peach half to get them as close to wood grilled as possible.

How Ripe Should Peaches Be For Grilling?

When you’re eating a peach as a snack, the best ones tend to be just slightly soft. Like you could stick your into them if you pushed hard.

For grilling, you want the peach to be ripe, but still firm. The peach will soften when it’s grilled, so if you start with an already soft peach you’ll end up with a mess.

What Does Mascarpone Ice Cream Taste Like? 

Mascarpone ice cream (made from Italian cheese) is super creamy, more creamy than most typical ice cream. It’s also slightly sweet, less sweet than typical cream.

Serving grilled peaches with mascarpone ice cream is a perfect match. The sweet peaches naturally augment the creamy but only subtly sweet ice cream.

How To Make Grilled Peaches With Mascarpone Ice Cream

Prep Time: 15 mins. | Cook Time: 5 mins. | Serves: 6

Ingredients
3 ripe peaches, cut in half
1 cup mascarpone cheese
1/2 cup powdered sugar
2 tbsp graham cracker crumbs
2 tsp ground cinnamon
2 tsp vanilla extract
1 ½  cups heavy whipping cream
2 tbsp maple syrup

Step 1: Light your grill and prepare for direct grilling over medium heat.

Step 2: Add the mascarpone cheese, powdered sugar, cinnamon and vanilla extract to a large bowl and beat with a hand mixer. Add in the heavy whipping cream and continue beating until it becomes fluffy. Place in the refrigerator.

Step 3: Place peaches cut side down on grill over direct heat, and grill till charred with deep colored grill marks. About two to three minutes. Turn the peaches and grill the other side for an additional 90 seconds.

Step 4: Remove peaches from the grill, and fill each one with mascarpone ice cream. top with a dusting of graham cracker crumbs and a drizzle of maple syrup.
