This grilled pineapple recipe is bright, fresh, and full of flavor. Grilling the pineapple produces a sweet tropical flavor that compliments the ice cream perfectly and because it’s fruit, I think it cancels out the ice cream?

By introducing the natural sugars of the pineapple to the intense heat of the grill, they caramelize. This caramelized sugar is much sweeter, and makes for a real treat.
Add to that, the subtle flavor of charred pineapple flesh is less acidic tasting than raw pineapple.
Variations For Grilled Pineapple Dessert
- Sprinkle the pineapple slices with cinnamon and sugar before grilling.
- Dust the pineapple slices with brown sugar before they hit the grill.
- Heat the slices up with a touch of chili powder or cayenne pepper before they get kissed by the flame.
- Switch out the vanilla ice cream for some Caribbean coconut gelato for a grilled Pina Colada.
How To Serve This Dessert
This grilled pineapple recipe can be served in either individual portions, or as a dessert for two. There’s definitely something communal about sharing this grilled dessert with someone.

How To Make Grilled Pineapple
Prep Time: 5 mins | Cook Time: 5 mins | Serves: 4
Ingredients
1 fresh pineapple
6 scoops vanilla bean ice cream
3 cups whipped cream
½ cup caramel sauce
¼ cup toasted almond slivers
¼ cup sweetened shredded coconut, toasted
6-8 mint leaves
Step 1: Light grill and prepare for high direct heat.
Step 2: Slice off top and bottom of the pineapple.
Step 3: Stand the pineapple on its bottom and remove the skin by making as thin as possible vertical slices. The sweetest part of the fruit is that closest to the skin so you’ll want to keep as much of that flesh as possible.
Step 4: Turn it on its side, and cut pineapple into ¼” slices.
Step 5: Place the slices on the grill over direct heat. Grill till a nice char forms on the pineapple slices, about two minutes per side.
Step 6: Remove pineapple from grill, top each slice with a scoop of ice cream, a dollop of whipped cream, toasted coconut and almonds. Drizzle each with caramel sauce, garnish with mint and serve.
