I’m a big fan of infused butter. Given my new-found love for seafood, I was excited to try something that is more seafood- and veggie-focused.
I can’t believe I just said that. I hope my red meat brethren don’t disown me now!
In any case, I wanted to develop something that was more dill-forward but not overpowering enough that it would detract from the flavor of the wild-caught fish I have been grilling lately. This one took a bit to nail down. The key for me was using unsalted butter and adding back in my own rosemary salt. Using salted butter with the rosemary salt was just too salty. What you’ll find below is the perfect addition to seafood, as well as spring vegetables.
Roasted Garlic and Dill Butter Recipe
Serves: 6-8 | Prep Time: 20 mins| Active time: 30 mins
Ingredients
1 stick unsalted butter, room temperature
½ finely minced shallot
3 cloves garlic, roasted and smashed
Zest and juice of 1 Lemon
¼ cup dill, finely chopped
1 Tbs Rosemary Salt
Olive oil, just a drizzle
Pinch of salt
Step-by-Step
Step 1: Preheat oven to 350 degrees.
Step 2: Place garlic cloves on a foil-lined tray, drizzle some olive oil on top and sprinkle with salt. Sprinkle the cloves with rosemary salt if you have some, otherwise sea salt will work.
Step 3: Place in the oven and roast for 15 minutes. Remove from oven and cool.
Step 4: Once the garlic cloves have cooled, smash them with a fork.
Step 5: Add rosemary salt, dill, smashed garlic, shallot, lemon zest, and lemon juice into the bowl with butter.
Step 6: Mix butter and other ingredients thoroughly.
Step 7: Place butter on parchment paper in a log shape and top with some extra whole pieces of dill.
Step 8: Roll the butter tightly and twist the ends of the parchment paper to seal it.
Step 9: Place log into the fridge and allow it to harden.
Step 10: Serve with your favorite dish.
