It’s just about summertime, and for me that means cookouts and summer block parties. If you’re like me, you never want to show up at one of these gatherings with some boring old side dish. But what if you don’t have the time or desire to spend hours putting together something to bring? Enter this zesty slaw recipe that is always a crowd pleaser and can be served as a solo side dish to go with one of my many grill recipes or as a topping for a barbecue platter sandwich.
Apple, Radish, and Jalapeño Slaw
Serves: 4-6 | Prep time: 20 minutes
Ingredients
3 cups shredded cabbage
½ apple, thinly sliced (julienned)
½ jalapeño, seeds removed and julienned
4 radishes, julienned
¼ cup chopped cilantro
1 tsp apple cider vinegar
3 tbsp mayo
½ tsp salt
½ tsp pepper
Step-by-Step
Step 1: Put cabbage, apples, jalapeño, radish, and cilantro in a bowl. Toss to combine.
Step 3: In a separate bowl, add apple cider vinegar, mayo, salt, and pepper. Whisk until combined.
Step 4: Pour the wet ingredients into the dry and toss gently until combined.
